A dough proofing and fermentation cabinet is used to let dough rise and rest properly before baking bread, rolls and pastries. Unlike with a food warmer, precise thermostatic temperature control is critical here, as it helps the dough achieve a uniform, porous structure and proper volume.
- Number of trays: Models take 8, 13 or 16 standard 60×40 cm trays; choose according to your bakery’s daily output.
- Power source and output: Most cabinets are rated at 2–2.6 kW and require a standard 220 V supply, while high-power combined systems run on 380 V.
- Design and controls: Options include both freestanding electric dough proofers and integrated units combined with a rotary oven and fitted with touch controls.
For a small bakery or café kitchen, compact 8- or 13-level electric cabinets are entirely sufficient, while high-volume production facilities are better served by 16-tray systems or ones integrated with an oven.
