A planetary mixer is a versatile machine for pastry shops and restaurants. Unlike spiral mixers and dough kneaders, which handle only heavy dough, the planetary mechanism is used for making creams, soufflés, sauces and doughs of varying consistency. Most units come with three attachments: a whisk, a flat beater and a dough hook.
- Bowl capacity: For small pastry shops, models of 5 to 10 L are sufficient, while units of 20 to 60 L are intended for large-scale production.
- Speed settings: Compact models often have 11 speeds, while large mixers are equipped with 3 fixed speeds for different stages of preparation.
- Power supply and wattage: Models up to 40 L are rated at 0.5–2 kW and connect to a standard 220 V supply, while the powerful 60 L unit requires 380 V.
Choosing the right bowl capacity and speed range noticeably accelerates the workflow and ensures a uniform texture for creams and doughs. This machine easily handles the daily workload of a professional kitchen.
